Happy New Year! New Year’s Day is a time for traditions, and one of my personal favorites is enjoying a hearty dish of black-eyed peas for good luck in the year ahead. If you’ve ever found yourself struggling to enjoy these legumes, you’re in for a treat with this Easy Black-Eyed Peas Recipe.
Why Canned Black-Eyed Peas?
Traditionally, preparing black-eyed peas from scratch can be a bit of a hassle. However, this year, I decided to give canned black-eyed peas a try, and I’m delighted with the results. Opting for canned peas not only saves time but also delivers fantastic flavor, ultimately making them a pantry staple for years to come.
Ingredients:
- 5 Canned Black-Eyed Peas, drained and washed
- 2 Canned “no salt” diced tomatoes
- 1 large onion (diced)
- 2 (16-oz.) packages of smoked sausage, diced
- 1 Unsalted Beef Broth, 32 Oz
- Pepper
- Red pepper flakes
- Salt (add only before serving)
- 2 cups of white or brown rice
Instructions:
- Open the canned black-eyed peas, drain them in a fine strainer, wash off all the juice, and place them in the slow cooker.
- Add the canned diced tomatoes, diced onions, diced smoked sausages, beef broth, and your choice of spices to the slow cooker. Remember not to add salt at this stage, as it can lead to oversalting.
- Cook on high for 4 hours or on low for 8 hours.
- While the peas are cooking, prepare your rice by using a ratio of 4 cups of water to 2 cups of rice.
- Just before serving, add salt to taste to the black-eyed peas.
- Serve the flavorful black-eyed peas alongside the rice.
