Get your grills ready! You’re in for a treat today. I will be sharing the recipe Grilled Cornish Hens with Korean BBQ Marinade and Spicy Mayo Dipping Sauce and will teaching you how to spatchcock. I picked up a few packages of Tyson Cornish Game Hen Twin Pack and a bottle of Kikkoman sauce at my local Walmart last week to prep for a BBQ dinner I was throwing. Did you know that you can grill the Cornish Game Hen as well?
I have a Korean BBQ Marinade recipe that I use on chicken and knew that it would pair perfect with the Cornish Game Hens since I was going to grill them. This is a marinade that you can use on any type of meat really, and love using this on skirt steak as well.
What you need:
- A few packages of Tyson Cornish Game Hen Twin Pack, I picked up 1 hen for each person.
- Hot grill (because you can’t cook on a cold grill – HA)
- Poultry/Meat Shears
- Cutting Board
- A few bowls
For the Marinade:
- 1 cup sugar
- 1 cup Kikkoman soy sauce
- 4 tablespoons minced garlic
- 2 tablespoons sesame oil
- 1/4 teaspoon black pepper
- 1/2 cup sesame seeds
- 1/2 cup water
- 2 green onions
- Red pepper flakes (optional)
Directions
****Make sure you defrost the hens first since you purchase them frozen
Step 1: Mix all the ingredients for the marinade together until combined in a bowl and set aside.
Step 2: Remove the hens from its packaging and rinse off, this is optional but I like to rinse off the liquid. Place your hens on your cutting board and cut out the back bone, this technique is called Spatchcock. It looks like it is butterflied and this allows for even cooking.
Step 3: Put Cornish Hens into a plastic bag or a big enough bowl and the pour the marinade over the hens. Store in the fridge for several hours (overnight is best) to soak in the entire good flavor.
Step 4: Grill and enjoy! The hens grill up pretty fast. Grill them on low heat for 15 minutes on each side.
While the hens cooked on the grill I made this Spicy Mayo Dipping Sauce to go along with my Grilled Cornish Hens. I wanted to give my hens a little kick but didn’t want to add it in to the actual marinade since I knew my kids wouldn’t like it as spicy as I wanted it to be. I love spicy mayo on my sushi but never had made it on my own before, I am so glad that I did so now I can add it to anything I want now.
For the Spicy Mayo Dipping Sauce:
- 1/2 cup mayonnaise, preferably Japanese (I used regular since I couldn’t find the Japanese kind)
- 2 tablespoon Sriracha hot sauce (you can add more if you like more spicy)
- 1 teaspoon freshly squeezed lime juice (optional)
Combine in a bowl and set aside until ready to serve
