The school year is almost over and soon it will be summer time! That means more snacks and if you have boys in your household like I do then you know it’s always snack time. I am always searching for new ideas for the summer to keep my boys nourished but it has to be something quick and easy that they can put together themselves. Here are some snack and lunch ideas for summer.
Our summer will be busy with soccer practice, tutoring sessions and vacations so we need something that will fit into our schedule. I usually try to plan lunch and snacks for the boys but have a really hard to keep them creative. I try to stay on a budget, even if that means purchasing cheap food where I can.
What I love about a few of these items are that they travel well, so on our next road trip I can throw some in our bags and be worry free about lunch or snack time. Separately these items make the perfect snack but combine a few and you have the perfect lunch!
All kids (and most adults) love Kraft Mac and Cheese products which are great because you can find Macaroni & Cheese Cups.
Easy Snack and Lunch Ideas For Summer Break
Choose 1 for a snack or 3 to make the perfect lunch. You can find most of them at your local grocery store, dollar store, or even Amazon.
- Kraft Original Flavor Macaroni & Cheese Dinner (can travel but has to be made beforehand)
- Easy Mac Macaroni & Cheese, Micro Cups*
- Kool-Aid Bursts, 6 count.*
- Capri Sun Spouts, 15 count*
- Jell-O: Instant Chocolate Pudding & Pie Filling (recipe following using this product)

Store the items up where your child/children can easily access them allowing an excellent way to build independence in your children.
I came up with this recipe to give a new spin on pudding! They worked out great and my kids loved them.
Mini Freezer Pudding Cups
You will need:
- Instant Chocolate or Vanilla Pudding (I used Chocolate for this recipe)
- Whipped Topping
- 24 Vanilla Wafer cookies
- 12 cupcake wrappers (any color will do)
- 1 teaspoon Pure Vanilla Extract
How to put it together:
Make pudding according to package. If you are using the Cook and Serve kind, set aside and allow to cool. (I had a little helper with this part)
Add wrappers into cupcake pan and place wafer cookie into it.
Add vanilla extract to pudding and fold in whipped topping, I didn’t fully mix showing off the white swirl.
Pour pudding mixture into cupcake cups 2/3 of the way and place a wafer cookie on top, freeze over night . If you have any pudding left over serve that night for dessert.
Serve, keeping them in the freezer until ready to eat.
